I’ve made nori snack rolls before, but I’ve come up with a quicker way to make them with nut butter instead of ground nuts.

These nori snack rolls are the perfect answer for a salty, savory snack that’s healthy instead of relying on chips – and they’re really quick to put together!

Ingredients

  • 2 sheets nori
  • 1-2 Tbsp almond, cashew, peanut or other nut butter
  • 1 Tbsp tamari or soy sauce
  • 1 mushroom, sliced
  • 1 Tbsp pickled ginger

Directions

  1. Mix together the nut butter and tamari, until smooth.
  2. Lay a nori roll out on a rolling mat, and spread the nut butter mixture at the far end, leaving enough space to seal the roll.
  3. Lay a row of mushroom slices and ginger along the near end and roll up.
  4. Put the rolls in a toaster oven or oven, at 350F for 10-15 min or on toast/broil for 3-4 min.
  5. Slice the rolls into 3 smaller pieces and serve as a snack or an appetizer.

What other uses do you have for nori, aside from sushi? Let me know in the comments below!
