Whole Foods Chocolate Krinkles

I know a lot of you are like me, and like to make ridiculously yummy treats from whole foods when you can, so I made this variation as part of my new 28 day meal plan.

A couple of people were asking me about this recipe in the forum for the healthy eating plan, so I thought to properly answer I would film the recipe for them - and share it with you!

I often make these with carob powder instead of cocoa, and they're phenomenal that way too. I love the flavor of carob with dates, they go really well.

Carob also makes them a bit sweeter than with cocoa, so you might want to use non-dairy milk for moisture rather than the maple syrup if you use carob.

A recent sad development for me is that the only store in my city that sold carob has stopped carrying it!!! Why, Bulk Barn, why?? :( Maybe I need to move to Bermuda...

Ingredients

  • 4 Tbsp cocoa powder (or carob)
  • 4 Tbsp medjool or other soft dates
  • 1 Tbsp maple syrup (for moisture - can sub for pure fruit juice, non-dairy milk or water if you want)
  • 4 Tbsp nut/seed butter (peanut, almond, tahini, sunflower, cashew, etc)
  • 1 cup puffed rice

Directions

  1. Puree all of the ingredients except the puffed cereal in a small food processor.
  2. Add the puffed cereal, and mix it together with your hands. Then form them into balls and place them onto a cookie sheet lined with parchment or waxed paper.
  3. Put the sheet in the fridge to set, then store in a sealed container or cookie tin in the fridge, separated by parchment or wax paper.

I hope you enjoy this variation of chocolate krinkles as much as the original! I could eat the whole batch in a day if I'm not careful...
