If you’re looking for a comforting side dish that the family will love, look no further! Steaming these carrots is the healthiest cooking method, but you could also saute the vegetables.

Ingredients

  • 2 parsnips, peeled and cut into sticks
  • 2 carrots, peeled and cut into sticks
  • pinch salt
  • 1 Tbsp mustard seeds
  • 1 Tbsp olive oil
  • 1 tsp dijon mustard
  • 1 tsp maple syrup

Directions

  1. Put the vegetables into a steaming basket and rub a pinch of salt over them, then put the basket over a pot of boiling water.
  2. When they have been cooking for about 5 minutes, put the mustard seeds into the toaster oven or oven for a few minutes at about 300-350 degrees F, until they are slightly browned. Mix together the oil, mustard and maple syrup in a small bowl, adding the mustard seeds when they are toasted.
  3. At this time, the vegetables should be finished cooking, so put them in a baking dish and coat them with the dressing. Put them back in the hot oven for 5-10 minutes, until the glaze thickens slightly.
  4. If you prefer sauteeing, toast the mustard seeds in a pan, then saute the vegetables. Add the dressing to the pan for a few minutes and it will thicken slightly.
