Citrus and Raw Beet Salad Recipe

This citrus and raw beet salad recipe is perfect for those on a raw diet, or for those wanting to incorporate fresh, raw veggies into your diet. If you usually cook your beets, try them raw. The crunch and moisture is divine!

They are, however, difficult to digest and we rarely chew them properly. Grating, and then marinating, them makes them much easier to digest. Orange and ginger liven up the vegetables and make for a really delicious raw meal.

I think of recipes as ideas, starting points, or general outlines for a meal, and I definitely encourage you to experiment with all of my recipes to make them work for you and your tastes.

Ingredients

  • 4 small beets, peeled and grated
  • 2 carrots, grated
  • 1 cup broccoli, chopped
  • 2 oranges, zested, 1 peeled and chopped, 1 juiced
  • 2/3″ slice ginger, grated and juiced
  • 1 Tbsp olive oil
  • pinch salt

Directions

  1. Put the beets, carrots and broccoli in a salad bowl.
  2. Zest the oranges into a jar or bowl for the dressing. Peel and chop one of the oranges, and add it to the salad. Squeeze the juice from the other orange into the jar/bowl. Grate the ginger and squeeze the juice from the pulp into the jar/bowl as well. Add the olive oil and salt, and shake or whisk to combine.
  3. Pour the dressing over the salad and toss, then leave it to marinate for 30 minutes, or up to a couple of hours.
