Cucumber Side Salad

Whip up this easy and satisfying cucumber salad recipe as a side dish, or to take to a pot luck. Green vegetables are an important part of your diet since they have a lot of nutrients, but they also help to digest other foods.

Yogurt is a tough ingredient to substitute in healthy vegan recipes – here I use coconut milk with lemon juice for the creamy tang.

Cucumber Salad Recipe

Makes enough for 2 salads

Ingredients

  • ½ can coconut milk (approx 200 mL)
  • 2 cloves garlic, pressed
  • 1 lemon, zested and juiced
  • 1 Tbsp dill (fresh or dried)
  • Pinch black pepper
  • ½ Tbsp onion powder (or a small amount of grated onion)
  • 1 cucumber, chopped
  • 3 stalks celery, chopped (optional)

Directions

  1. Prepare your dressing in a bowl large enough to hold your salad by mixing all of the ingredients together. Add the vegetables, toss and serve! I told you it was easy.
