Easy Camping Dinner Ideas

This easy camping dinner is one that I put together at campsites when traveling and don’t have a kitchen. But it would be just as good on a busy weeknight, when you don’t want to turn on the stove.

The key to a healthy meal is to use whole foods (especially lots of fresh veggies), and if you use a sauce or buy something packaged, to look for a short ingredient list with all good stuff.

I always bring a small cutting board and knife with me to make food on the road. Portable containers (I use plastic, but glass or stainless steel would be even better) are also really handy to make your meals in, and keep leftovers.

One thing I forgot to bring was a can opener, but sometimes you can be lucky enough to find cans with pull tabs. You can also find soups in boxes now, which open easily. Sauces and salsa in jars are another good bet – just be sure to check the ingredient list!

Treats are always fun when traveling or camping, and it’s getting so much easier to find healthy treats in stores. We picked up a chocolate-hazelnut Larabar, which is something I usually don’t buy because I look at how simple the ingredient list is and think ‘I could just make this!’ But – when I’m not at home, and can’t make it myself, it’s a perfect treat because it’s made with all whole foods.

Ingredients

  • 1 can chickpeas
  • 1/2 cup salsa
  • 4 carrots
  • 1 bell pepper (any color)
  • 1/2 cucumber
  • 1 cup sprouts
  • 1 jocolat (chocolate-hazelnut) Larabar

Directions

  1. Rinse and drain the chickpeas. If you’re camping, be sure to drain the chickpeas in a place that won’t attract animals, or at least somewhere far from any tents.
  2. Mix together the chickpeas with 1/4 cup of salsa and let it sit while you chop the rest of the veggies. Toss them all together, and top it off with the sprouts. This meal is also excellent in a wrap or pita, or on top of a rice cake.
  3. Enjoy the jocolat for dessert 🙂
