Use leftover cooked quinoa for a quick and simple lunch that fills you up and gives you all the nourishment you need.

Easy Quinoa Salad Recipe

Prep time:
Makes 1 big salad

  • 1 cup chopped kale, spinach or lettuce
  • 1 cup cooked and chilled quinoa
  • 1/2 cup chopped zucchini or cucumber
  • 1/2 cup chopped tomatoes
  • 1/2 cup chopped avocado or guacamole
  • 2 Tbsp tahini dressing


  1. Lay the greens on a plate, top with quinoa and veggies and drizzle with dressing.
  2. If taking this to go, use kale or spinach or take the lettuce on the side to avoid wilting.
