Sweet Potato Veggie Burger Recipe

Sweet Potato Veggie Burger Recipe

This burger recipe is made delicious thanks to the sweet potatoes, and made easy thanks to the rolled oats! They can be a little tricky to keep from sticking, but they can still grill nicely. Still, I normally bake mine on a cookie sheet lined with parchment paper to avoid sticking period.

Burger

  • 1 sweet potato, peeled, chopped and steamed
  • 1-1 1/2 cups oats (depending on the size of your sweet potato)
  • 1 Tbsp fresh oregano, or 1 tsp dried
  • 1 Tbsp fresh parsley, chopped
  • 1 Tbsp nutritional yeast (optional)
  • pinch salt and pepper

Directions

  1. Mash the cooked sweet potato, then stir in the oats until you get a texture that will hold together in patties, somewhat like cookie dough. Stir in the seasonings, then form the mixture into patties.
  2. You can cook them in a frying pan with a bit of oil, or on a baking sheet lined with parchment paper in the oven or on the BBQ. Put them in at about 350 degrees F for about 30 minutes, or until the burgers are a bit crispy on the outside.
